Any advise would help ...

I've noticed some thinning in the last 2 years. Although I have a full head of hair (some receeding in the upper sides) the thinning is starting to concern me. Although this is true, I am scared of trying Rogaine or Propecia as I've heard of many sides. I would rather try something lighter like a shampoo and stick to nutrition (vitamins, supplements.).

Any suggestions on shampoos (DHT inhibitors), vitamins and supplements?

No shampoo is very effective against hairloss. Face it - it's a shampoo. You use it to wash your hair, it's in contact with the scalp for a few seconds, then you rinse it out. How can you expect that process to have any significant affect on hormones like DHT? 8)

Equally, the nutritional route is not your "get out of jail free" card. Firstly, there are many suggestions for a diet that might affect your hormone balance. But all of these are unproven, would probably be expensive and difficult to stick to, and even if they did work, which is a mighty leap of faith, would cause side effects!

If you really want to do something about balding, you have to man up and use the proven treatments. Otherwise just shave your head.
